*** The dish washer washed his hands for less than 10 seconds. This is not long enough. *** COS Please retrain staff on proper hand washing. I will get the restaurant a handwashing sign that is in Spanish. - 2-301.12 (B): (B) FOOD EMPLOYEES shall use the following cleaning procedure in the order stated to clean their hands and exposed portions of their arms, including surrogate prosthetic devices for hands and arms: (1) Rinse under clean, running warm water; (2) Apply an amount of cleaning compound recommended by the cleaning compound manufacturer; (3) Rub together vigorously for at least 10 to 15 seconds while: (a) Paying particular attention to removing soil from underneath the fingernails during the cleaning procedure, and b) Creating friction on the surfaces of the hands and arms or surrogate prosthetic devices for hands and arms, finger tips, and areas between the fingers; (4) Thoroughly rinse under clean, running warm water; and (5) Immediately follow the cleaning procedure with thorough drying using a method as specified under ยง 6-301.12. - V,COS |

*** One of the coolers broke yesterday. There is enough space in the walk-in to accommodate the extra inventory as of right now. The repair man has to order parts to fix the cooler, and it may take time until it is fixed. *** The date labeling in this facility is good. However, sometimes the date of an item is written day/month/ year and sometimes month/day/year. Choose one way of writing the date. Either is fine, but it needs to be consistent to meet FDA code. |
